cilantro lime shrimp salad
Last night I was craving a cilantro lime shrimp salad, so I decided to throw some ingredients together in hopes it would work out. I got lucky. It tasted delicious and I will be making this again very soon. Again, this salad was thrown together as I went...but, I've tried to come up with some type of recipe to share and save for myself:
frozen cooked shrimp (you could use fresh, this is all I had)
2 heads of romaine lettuce (the organic packaged kind)
1 large avocado
1 tomato
1/4 red onion chopped
2 limes worth of juice
1/2 lemon juice
salt
pepper
old bay seasoning
olive oil
cilantro
bowl that you can cover up and shake really well
I purchased cooked shrimp, and then sprinkled them with old bay seasoning & sauteed them in a little lemon/lime and chopped cilantro. Once thawed, I drained them and then added himalayan pink salt and fresh pepper and put them in the fridge to cool off.
Then chopped the lettuce, tomato, red onion, avocado and set aside. Grabbed the chilled shrimp and added chopped cilantro, lime, lemon, avocado and a dash of olive oil. I really mixed those up until there were no avocado chunks. Then I slowly added in the rest of the ingredients, stirring the bowl each time a new item was added.
After it was all in the bowl, I added back the lid (I used a salad spinner bowl) and shook it several times until the items were all mixed in. I finished it off with lots of fresh pepper and a dash of the salt and then served immediately with chips and salsa.
If you rather not do the shrimp, I think this salad would be just as tasty without it.
