It makes me happy that fall inspires scrumptious additions, like pumpkin, to a breakfast classic. I used Bob's Red Mill mix and made the following adjustments:
3/4 c. rice milk
1 egg
1 cup and 1/3 cup mix
1/8 cup of sugar
a pinch of ground cloves
a pinch of ground cinnamon
a pinch of ground ginger
a dash of oil
and about a cup of pumpkin
makes the dark {and very chilly} mornings a bit more lovely...

Yum. I need to try this recipe. Once in college my roommate and I made these with a recipe that used leftover slices of pumpkin pie, and cranberry maple syrup. It was delicious, but I can't find the recipe anymore!

ReplyDeleteI loooove pumpkin pancakes! My guy made them a few weeks ago, they had the recipe in Mens Health Mag....soo GOOD. You can make extra and freeze them too!
