gluten-free brownie cupcakes with coconut ganache.

When I was at babycakes in ny...
I had the most delicious brownie cupcake:

But...before I get onto the cupcakes, I want to say that I ordered my custom calling cards from pixelimpress and I'm absolutely ecstatic over the results.  You can see one below up in babycakes {coral zig zags with a lilac text}.  I highly recommend them!


ok, back to the cupcakes...

If I lived in NY, I would go just for these...but I don't, and I attempted to make something like it but with a little bit of a twist.  Although nothing can compete with their delightful treats.


gluten-free brownie cupcakes:
*1 package of my favorite gluten free brownie mix, Namaste {you can get this brand at most health food stores, including whole foods}
*chocolate chips {ghiradelli's baking chips are a bit bigger and make for a creamier cupcake}

coconut ganache
*left over chocolate chips from brownie mix
*around 1/4 cup coconut milk
* around 1/4 cup coconut oil

Follow the instructions on the package and include 3/4 of your chocolate chips into the mix right before pouring into cupcake liners.  Fill cupcake liners about 3/4 of the way.  Bake for 40 minutes if you want them soft.

For the ganache, slowly melt chocolate chips adding a touch of coconut milk and coconut oil, stirring constantly.  Dip tops of cupcakes into ganache and eat immediately!

    I have always been hesitant of gluten free baked goods....will they taste good?! I hear yes and no, maybe I should just make these and try for myself! Thanks for the recipe.
